From Farm to Table
Week 1: June 16 – June 22, 2019
Week 2: June 23 – June 29, 2019
Get your hands dirty exploring local food systems! In these weeklong farm-to-table programs, you and a group of peers will spend time working on our campus farm. You’ll help care for our sheep, goats and chickens and will learn how to weed and harvest in the garden beds. Farm work will be balanced by time in the kitchen, where you’ll prepare a range of delicious and healthy meals, snacks and desserts, all of which will include ingredients you helped to harvest.
Cooking & farming will be interspersed with a range of other activities around our mountain campus, including hiking, canoeing, and swimming.
Students will share rooms in our lakeside Eileen Rockefeller House and enjoy fresh meals, some of which they’ll prepare for themselves using their new skills. At the end of the week, students will get to take home a new cookbook filled with all the recipes they’ve learned.
Two sessions are offered, each of which will include different recipes and techniques. Students are welcome to attend for one or both weeks.
